Bhutte Ki Kees is a famous street food from Indore, Madhya Pradesh. It is prepared with almost grated corns, milk and a mix of spices. One can get a combined taste of hot spice, the sourness of namkeen, and the creaminess of milk from this street food.

Ingredients:

  • 2 Cups of Sweet Corn Kernels

  • 1/2 Tsp. Turmeric Powder
  • 1/2 Tsp. Coriander Powder
  • Salt to taste
  • 1 Tsp. Sugar
  • 1 Tbsp. Oil
  • 1/2 Tsp. Mustard Seeds
  • 5-6 Curry Leaves
  • Pinch of Asafoetida
  • Green Coriander and Namkeen, for garnishing
  • 2 Tsp. Lemon Juice

Instructions:

  • Grind the sweet corns, ginger, green chilli and cumin seeds together coarsely and keep aside in a separate bowl.
  • Heat the oil in a pan, add mustard seeds, asafoetida and curry leaves. When they start to splutter, add turmeric powder and coriander powder and stir for two seconds.
  • Add corn paste and cook for 5 minutes until the moisture evaporates.
  • Add the milk slowly, keep on stirring and cook on a simmer flame.
  • Add salt, sugar and lemon juice and mix again.
  • Serve hot and garnish with coriander leaves and namkeen.
